Growing up, cottage cheese was a staple in our house. It was great for quick snacks, additions to lunch time salads and was also used whenever my parents made potato pancakes. I've been craving my dad's potato pancake recipe lately. Since going vegan, without the cottage cheese, it felt like I was missing something when ever I made the pancakes (recipe up soon).
So I started a search for a decent recipe. All I found were weird substitutions using way too much nutritional yeast. So I went in a completely different direction for flavoring. Vegan mayonnaise and non-dairy milk. These two ingredients give the creamy richness that I think of when I ate cottage cheese with the curd texture from the tofu. This flavor combination is sweet and creamy. If you really want a cheesy taste, then by all means, add some nooch, but do yourself a favor and taste this before hand. This recipe is rich. I found a half a block of firm tofu made enough for two people to use for a meal.
I developed this recipe using cashew milk. This was before I learned about the low wages and the physical pain and scaring women go through in order to crack the shell from the seed in India. I had chosen cashew milk for it's sweetness, but almond, or even soy would work just as well.
If you double this recipe, I recommend that you decrease the amount of mayonnaise by one tablespoon. You might even want to increase the amount of liquid to 3/4 cup instead of 1/2 cup.
I made and ate this so quickly, the finished product is all I have for pics this time around.
Tofu Cottage Cheese
1/2 block of extra firm tofu
3 tablespoons of vegan mayonnaise
1/4 cup unsweetened non dairy milk
1/4 -1/2 tsp salt
Into a bowl, break down the 1/2 block of tofu into small cottage cheese like pieces. Pressing your thumb down on the corner of the tofu will create this affect. Add the remaining ingredients and mix gently until incorporated.
Remember, allow the tofu to "marinate" for at least thirty minutes to enhance the flavor of the tofu. I would love to know what you thought of it. Enjoy.
